Raise your hand if you’ve ever bought a bag of avocados at a warehouse store, thinking you’ll be able to eat every single one before they go bad, only to end up eating only your words by the end of the week. Yeah, me too. It’s happened to most of us. So many of us, in fact, that scientists — and Costco execs — are doing something about it.
See, Apeel Sciences, a California-based startup company, says it has invented a special powder — which gets mixed with water — to keep avocados at peak ripeness for twice as long as avocados without the powder. The powder is made of recycled plant material and, when used to wash the avocados, it becomes a sort of second skin. (If this sounds like a lot of hocus pocus to you, it might help you to know that Bill Gates is one of the company’s backers.)
Apparently the wash keeps the moisture inside the produce and oxygen out, which dramatically slows the rate that produce spoils, the company’s website explains. The stuff is odorless, colorless, and tasteless, and while it’s being rolled out on avocados first, it’s also been tested on more than two dozen other fruits and vegetables.
What’s Costco got to do with this? Apeel Sciences is currently working with produce supplier Del Rey Avocados, and the long-lasting avocados will soon be available in more than 100 Midwestern grocery stores, including 30 Costco locations.
